Paneer lababdar is a very popular north-indian gravy made with cottage cheese in a creamy and rich tomato and onion gravy, served with naan , roti or jeera rice. INGREDIENTS AND RECIPE BY THE RESTAURANT IN PANCHKULA TO MAKE YOUR COOKING MORE EASY AND INTERESTING
INGREDIENTS
- 1 Cup Water
- 4 Tomato (Cube)
- 3 Clove Garlic
- 2 inch ginger
- 2 Pods Cardamom
- 4 Cloves
- 15 Cashew / Kaju
- Salt as per taste
OTHER INGREDIENTS
- 3 Tsp Butter
- 3 Tsp Oil
- 1 Bay Leaf / Tej Patta
- 1 Inch Cinnamon
- 1 – 2 Chilli (slit)
- 1 tsp kasuri methi / dry fenugreek leaves
- 1 Onion (finely chopped)
- ¼ Tsp Turmeric
- ½ Tsp Kashmiri Red chilli powder
- ½ Tsp Coriander powder
- ½ Tsp cumin powder / Jeera powder
- 1 Cup water
- ¼ Tsp Salt
- 15 to 20 cubes paneer / cottage cheese
- 2 Tsp paneer / cottage cheese (grated)
- 2 Tsp cream / malai
- 2 Tsp Garam Masala
- 2 Tsp coriander (finely chopped)
INSTRUCTIONS FOR PREPARATION
- Firstly, heat the butter and oil in a pan,
- Fry 1 bay leaf, 1 inch cinnamon, 1 chilli and 1 tsp kasuri methi until it turns aromatic
- Further, add 1 onion and fry well until the onion turns golden brown
- Keep the flame low add turmeric, chilli powder, coriander powder and cumin powder
- Add chopped tomato puree and mix well
- Cover and cook for 10 minutes, or until the oil is released from masala paste
- Add water and salt accordingly and mix well
- Further add 15 cubes paneer and grated paneer, mix and cook well
- Turn off the flame and add cream, mix until the cream is combined well
- Additionally, add garam masala and coriander and mix well
- Finally, enjoy Paneer Lababdar with roti / rice.
The paneer lababdar recipe is a bit complicated and requires boiled tomatoes and spices in water eventually added to a curry base. The recipe can be a bit much for beginners but if you follow the tips mentioned by the chief cook of Best Vaishno Dhaba in Panchkula, it can become easier.
